Peaberry coffees happen when a natural mutation occurs in the cherry where only one fruit is produced instead of the two we normally see. Normally the two fruits inside the cherry grow side by side, producing coffee beans with one flat side where they pressed together in the cherry. In the case of the peaberry, only one fruit occurs and therefore doesn't have to share the space in the cherry, producing an adorable, smaller, and rounder little bean. Peaberries tend to have more sweetness and brighter acidity. 

Because you cannot tell by looking at the cherry itself if it has produced one or two beans, these beans are meticulously hand sorted in order to be sold separately.
